Capaian Pembelajaran Mata Kuliah (CPMK)
  1. Mahasiswa mampu mengidentifikasi bahaya mikrobiologis dan kimiawi dari bahan dasar dari suatu komoditas pascapanen
  2. Mahasiswa mampu memahami prinsip dasar sanitasi produk makanan dan sistem manajemen keamanan pangan
  3. Mahasiswa mampu menguasai prinsip dasar sistem manajemen keamanan pangan, termasuk Good Manufacturing Practices (GMP), Sanitation Standard Operating Procedures (SSOPs, Hazard Analysis Critical Control Point (HACCP), dan ISO 22000
  4. Mahasiswa mampu mengidentifikasi dan menuliskan kembali proses sanitasi yang perlu dilakukan sesuai dengan bahan baku komoditas yang akan diproduksi sesuai dengan prinsip SSOPs
  1. Students are able to identify microbiological and chemical hazards of the basic ingredients of a post-harvest commodity
  2. Students are able to understand the basic principles of food product sanitation and food safety management systems
  3. Students are able to master the basic principles of food safety management systems, including Good Manufacturing Practices (GMP), Sanitation Standard Operating Procedures (SSOPs, Hazard Analysis Critical Control Point (HACCP), and ISO 22000
  4. Students are able to identify and rewrite the sanitation processes that need to be carried out according to the raw materials for the commodities to be produced in accordance with SSOPs principles
