  1. Teknologi produksi dan karakteristik produk protein dari berbagai sumber protein nabati dan hewani, baik yang telah komersial maupun sumber potensial lainnya.
  2. Aplikasi-aplikasi protein nabati dalam industri pangan, pakan, dan technical application (biobased product).
  3. Fungsi protein dalam meningkatkan sustainability produksi dan pengolahan sumber daya nabati (biorefining protein containing biomass).
  4. Trend pasar terkini dari produk pangan, pakan, dan teknis berbasis protein.
  5. Potensi bahan baku sumber protein lokal Indonesia untuk memproduksi produk-produk protein dan memenuhi kebutuhan protein nasional.

Capaian Pembelajaran Mata Kuliah (CPMK)
  1. Mahasiswa mampu menjelaskan karakteristik berbagai sumber protein nabati dan hewani bahan baku produk protein, baik yang telah komersial maupun sumber potensial lainnya.
  2. Mahasiswa mampu menjelaskan fungsi pemisahan dan pemrosesan bahan baku kaya protein dalam meningkatkan nilai tambah produk samping pertanian atau peternakan.
  3. Mahasiswa mampu menjelaskan teknologi produksi dan spesifikasi produk protein nabati maupun hewani komersial yang digunakan dalam industri pangan, pakan, dan technical application (biobased product).
  4. Mahasiswa mampu mengidentifikasi dan menganalisa trend pasar terkini dari produk-produk berbasis protein.
  5. Mahasiswa mampu mengkaji potensi bahan baku sumber protein lokal Indonesia untuk memproduksi produk-produk berbasis protein dan memenuhi kebutuhan protein nasional secara berkelanjutan.
  1. Students are able to explain the characteristics of various sources of plant and animal-based protein raw materials, both commercial and other potential sources.
  2. Students are able to explain the function of separation and processing of protein-rich raw materials in increasing the added value of agricultural or livestock by-products.
  3. Students are able to explain the production technology and specifications of commercial plant and animal proteins used in the food, feed, and technical application industries (biobased products).
  4. Students are able to identify and analyze current market trends for protein-based products.
  5. Students are able to assess the potential of local Indonesian protein raw materials to produce protein-based products and meet national protein needs sustainably.
